Tasty Tuesday: Jollof Rice

Ingredients:

2 cups of long-grain parboiled rice

2-3 tablespoons of vegetable oil

1 onion, finely chopped

2-3 cloves of garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2-3 ripe tomatoes, blended into a puree

1 teaspoon tomato paste

2 cups chicken or vegetable broth

1 teaspoon paprika

1 teaspoon thyme

1 teaspoon curry powder

1 teaspoon dried or fresh thyme

Salt and pepper to taste.

Optional: Protein of choice (chicken, shrimp, tofu)

Instructions on how to prepare Jollof Rice:

Until the water runs clear, rinse the rice with cold water. Set aside after draining.

In a big skillet or pot, warm the vegetable oil over medium heat.

When the onions are transparent, add the chopped onions and sauté.

Add the minced garlic and continue cooking for a minute.

Add the diced bell peppers and cook for a few minutes until they begin to soften.

Pour in tomato puree or tomato paste. Stir occasionally until mixture thickens and oil begins to separate from it.

Season the mixture with paprika, thyme, curry powder, salt, and pepper according to your taste. The seasoning should be adjusted accordingly.

Pour in chicken or vegetable broth; bring it to boil while stirring occasionally.

Add the rinsed rice to the pot; stir and gradually decrease the temperature by turning it low.

Cover the pot and let it simmer until rice is cooked through and liquid is absorbed completely for about 20-25 minutes.

According to your choice, add either cooked chicken, shrimp or tofu during last 5-10 minutes of cooking, allowing them warm through.
