Tasty Tuesday: Molten Lava Cakes

Molten Lava Cakes are the height of luxury and passion. When you cut into these rich chocolate cakes, the molten center pours out and becomes sticky. These cakes are ideal for impressing your significant other with a delectable, handcrafted dessert on Valentine’s Day or any other special occasion.

Ingredients:

4 ounces (115g) of high-quality dark chocolate (at least 70% cocoa)

115g (1/2 cup) unsalted butter plus additional for greasiness

1/4 cup (50g) granulated sugar

2 large eggs

2 large egg yolks

1 teaspoon vanilla extract

1/4 cup (30g) all-purpose flour

Pinch of salt

Cocoa powder or powdered sugar, for dusting (optional)

Fresh berries and whipped cream, for serving (optional)

Instructions:

Set the oven’s temperature to 425°F (220°C). Four 6-ounce ramekins should be greased with butter, then gently dusted with powdered sugar or cocoa powder, shaking out any excess.

Melt the butter and chocolate: In a heat-resistant dish over a pot of simmering water (double boiler), melt the butter and dark chocolate together, stirring from time to time until smooth. As an alternative, you can microwave them in short bursts until smooth, stirring in between each time.

Get the batter ready: Beat the eggs, egg yolks, vanilla extract, and granulated sugar together thoroughly in a another basin. Pour the melted chocolate mixture into the egg mixture gradually while continuing to whisk until the mixture is smooth and thoroughly mixed.

Add the dry ingredients and fold in: Mix the salt and all-purpose flour with the chocolate mixture by sieving it. Just blend the dry ingredients with the wet mixture by gently folding them in. Take cautious not to blend too much.

Portion the batter into the ramekins by dividing it equally among them and filling them to approximately 3/4 of the way.

Bake: Arrange the ramekins on a baking tray and slide them into the oven that has been preheated. Bake for 12 to 14 minutes, until the centres are still soft and somewhat jiggly, but the sides are set.

Serve: Using oven mitts, carefully take out the ramekins from the oven. Allow to cool. Next, loosen the edges of each cake by running an offset spatula or butter knife around them. Turn each cake out onto a platter. If desired, dust with powdered sugar or cocoa powder. If preferred, top right away with whipped cream and fresh berries.
