Tasty Tuesday: Chicken Vegetable Stir-Fry

What could be more interesting than a Chicken Vegetable Stir-Fry? It is a speedy and tasty dish where tender chicken pieces are mixed with crunchy multi-colored vegetables cooked together in some flavor some sauce. It is versatile in that it can allow for usage of any type of veggies one might have at hand, making good use of leftovers and helping to clear out the fridge space. Below is an easy recipe to get you started:

Ingredients:

2 boneless skinless chicken breasts, thinly sliced

2 tbsps soy sauce

1 tbsp oyster sauce

1 tbsp hoisin sauce

1 tbsp sesame oil

2 cloves garlic, minced

1 tsp grated ginger

2 cups mixed vegetables (such as bell peppers, broccoli, carrots, snap peas, mushrooms, and onions), sliced

2 tbsps vegetable oil

Salt and pepper to taste.

Cooked rice or noodles for serving.

Optional garnishes: sliced green onions; and sesame seeds.

Here’s how you prepare this meal:

In a small bowl combine the soy sauce with oyster sauce, hoisin sauce, and sesame oil for your sauce then set it aside.

Place a large skillet or wok over medium-high heat then add 1 tablespoonful of vegetable oil into it before heating up. Allow it to become hot before sautéing the chicken breast slices until they turn brown which should take you around 5-6 minutes on average. Once done, remove them from the skillet but keep them aside.

Next, add another tablespoonful of vegetable oil into that same skillet then, add minced garlic followed by grated ginger and let them cook for about thirty seconds until fragrant.

Add mixed vegetables into the wok or skillet after ginger has been cooked; stir fry these crisp-tender; usually takes between three-four minutes approximately, so be keen not to overcook them, hence losing their crunchiness.

Put back the fried chicken together with its juice, then pour the prepared mixture over everything inside the pan while stirring continuously, until it gets heated through as well coated evenly with sauce. This should take an additional one to two minutes after which you may season according to your taste using salt and pepper.

Serve hot over cooked rice or noodles, garnishing if desired with sliced green onions plus sesame seeds.
