White Chocolate and Cherry Cake

Ingredients

For the Cake:

  • 200g (1 ¾ cups) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 150g (⅔ cup) unsalted butter, softened
  • 150g (¾ cup) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 120ml (½ cup) whole milk
  • 100g (3.5 oz) white chocolate, melted
  • 150g (1 cup) fresh or glace cherries, chopped

For the White Chocolate Frosting:

  • 200g (7 oz) white chocolate, melted and cooled
  • 250g (1 cup) unsalted butter, softened
  • 300g (2 ½ cups) powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream (if needed for consistency)

For Decoration:

  • Extra whole cherries
  • White chocolate shavings

Instructions

Make the Cake:

Set the oven’s temperature to 180°C (350°F).

Line two 8-inch cake pans with grease.
Mix the flour, baking powder, and salt in a bowl and put aside.
Beat the sugar and butter together in a different large bowl until they are light and fluffy.
After adding each egg one at a time, Beat the mixture thoroughly.

Add the vanilla extract and stir.
Stir in the milk and dry ingredients gradually, switching between the two.
Stir in chopped cherries and melted white chocolate.

Divide the batter evenly between the two cake tins and bake for 25-30 minutes or until a toothpick comes out clean.

After ten minutes of cooling the tins, move the cakes to a wire rack.

Prepare the Frosting:

Beat the butter until smooth and creamy.

Add the powdered sugar gradually, stirring thoroughly after each addition.

Stir in the melted white chocolate and vanilla extract.

If needed, add heavy cream one tablespoon at a time for a smoother texture.

Assemble the Cake:

Cover the initial layer of cake with a layer of icing.

Place the second cake layer on top and cover the entire cake with frosting.

Decorate with whole cherries and white chocolate shavings.
