Grilled chicken salad is a delicious and nutritious meal combining marinated chicken with salad greens and colorful vegetables. It’s made with olive oil, balsamic vinegar, salt, and pepper. Ingredients:
2 boneless, skinless chicken breasts
4 cups lettuce mix (including spinach, arugula, and romaine)
1 cup cherry tomatoes (halved)
1 cucumber (sliced)
½ red onion (thinly sliced)
1 avocado (sliced)
¼ cup crumbled feta cheese
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Salt and pepper to taste
Optional toppings: Sliced Almonds or Sunflower Seeds or Pumpkin Seeds
Instructions:
Marinate the Chicken
In a bowl add two tablespoons of olive oil, two tablespoons of balsamic vinegar and some salt and pepper.
Allow the chicken breasts to fully coat in the marinade.
For best flavor, marinate for at least 30 minutes in the fridge or up to 4 hours.
Preheat the Grill
Preheat your grill on medium- high heat.
Grill the Chicken
Remove from marinade discarding any excess marinade left behind.
Cook the chicken breasts on each side for roughly 6-8 minutes until they are no longer raw in the middle and cooked thoroughly through.
Let chicken stand for a few minutes before slicing it after removing from grill.
Assemble the Salad
Combine mixed salad greens with cherry tomatoes, cucumber, red onion, and avocado in a large bowl.
Put sliced grilled chicken on top of salad mixture provided above.
Optionally, feta cheese can be sprinkled over them as well as any other topping you would like to use should be added .
Dress the Salad
Take another small bowl; whisk together remaining olive oil,balsamic vinegar, salt and pepper into dressing form.
Pour dressing onto salad then toss gently so that it coats all ingredients evenly but lightly not too much such that they become wet or soaked in this case since salads should remain crispy as possible .
Serve
Separate grilled chicken salad among serving dishes.
Serve immediately!
