- 150 g mixed nuts (walnuts, cashews, almonds), roughly chopped
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 1 carrot, grated
- 100 g mushrooms, finely chopped
- 100 g breadcrumbs or rolled oats
- 1 tbsp olive oil
- 1 tbsp soy sauce or tamari
- 1 tsp dried thyme or rosemary
- 1 tsp sage (optional, for a festive note)
- 2 tbsp ground flaxseed mixed with 6 tbsp water (egg substitute)
- Salt and black pepper to taste
Method
Set the oven temperature to 180°C (fan 160°C). Grease a loaf pan lightly.
Saute the onion and garlic in a pan with heated olive oil until they are tender.
Cook the carrot and mushrooms until most of the moisture has gone.
Nuts, breadcrumbs (or oats), herbs, seasoning, and soy sauce should all be combined in a bowl.
Add the flaxseed mixture and cooked vegetables and stir until thoroughly blended.
Firmly press the mixture into the loaf pan.
Bake until firm and brown, about 40 to 45 minutes.
Before slicing and serving, let it rest for ten minutes.
