Tasty Tuesday: Quinoa and Vegetable stir-fry

Quinoa and vegetable stir fry is a healthy and delicious meal. This makes it ideal for anyone aiming to maintain a well-balanced diet due to the right kind of fiber, protein, vitamins, and minerals that it provides. The dish is stir-fried in a savory sauce such as onion garlic soy sauce rice vinegar sriracha or chili flakes which can be added when ready to serve. It suits amiable vegans, vegetarians, and gluten-free diets.

Ingredients:

1 cup Quinoa

2 cups Water/Vegetable broth

2 tbsp Olive oil

2 cloves Garlic (minced)

1 Onion (diced)

1 Bell pepper (sliced)

1 cup Broccoli florets

1 Carrot (julienned)

1 Zucchini (sliced)

Salt/pepper to taste

Chopped green onions/sesame seeds for garnish

Instructions:

Prepare the Quinoa:

Rinse quinoa under cold water using a fine-mesh strainer.

Boil quinoa mixed with water or vegetable broth in a pan.

After 15-20 minutes you will notice how the quinoa grains become fluffy then remove from heat, and cover with a lid allowing it to rest for an additional five minutes before fluffing using a fork.

Using a fork, fluff, then take from the heat and leave covered for 5 minutes.

Heat olive oil in a large skillet/wok over medium-high heat.

In a large skillet or wok heat olive oil at medium-high temperature until hot.

Fry minced garlic alongside diced onion(s) till fragrant thus onions appear transparent.

While frying the vegetables, add sliced bell pepper, broccoli florets, julienned carrot, sliced zucchini, and mushrooms into a skillet and stir-fry for five to seven minutes until vegetables are tender but still crunchy.

Combine:

Bring cooked quinoa into the same skillet containing vegetables.

Season with salt if desired.

Add soy sauce/tamari sesame oil rice vinegar sriracha or chili flakes if necessary and stir.

Season with salt and pepper. Adjust seasoning if necessary.

Serve:

Take the stir-fry to the serving plates/bowls.

Add chopped green onions and sesame seeds as garnish.

Serve hot!
