Ingredients
4 salmon fillets (about 6 oz each)
Cut four medium sweet potatoes into 1-inch pieces after peeling them.
1 head of broccoli, cut into florets
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon paprika
Salt and pepper to taste
Lemon wedges, for serving
Fresh parsley, chopped (optional, for garnish)
Instructions
To prepare the sweet potatoes, preheat the oven to 400°F, or 200°C.
The sweet potato cubes should be put on a parchment paper-lined baking pan.
Sprinkle with half of the minced garlic, salt, and pepper after drizzling with one tablespoon of olive oil. For an even coat, toss.
After laying the sweet potatoes down in a single layer and roasting them for 25 to 30 minutes, or until they are soft and browned, make sure to stir them halfway during the cooking process.
Preparing the Salmon
Prepare the salmon while the sweet potatoes are roasting.
Transfer the salmon fillets to a different parchment paper-lined baking sheet.
Combine the remaining olive oil, minced garlic, paprika, dried thyme, dried rosemary, salt, and pepper in a small bowl.
Coat the salmon fillets uniformly by brushing them with the seasoned oil mixture.
After roasting the sweet potatoes for ten minutes or so, add the salmon to the oven with them and bake for another twelve to fifteen minutes, or until the fish is thoroughly cooked and flake readily with a fork.
Steaming the Broccoli
Steam the broccoli while the salmon and sweet potatoes are cooking.
A saucepan should have a few inches of water in it when it is brought to a boil.
Broccoli florets should be placed in a steamer basket and placed over boiling water.
Steam the broccoli for three to five minutes, covered, or until it’s crisp-tender and brilliant green.
Assembling the Dish
Once everything is cooked, divide the baked salmon, roasted sweet potatoes, and steamed broccoli evenly among four plates.
Garnish with fresh parsley if desired and serve with lemon wedges on the side for squeezing over the salmon.
