Ingredients:

4 large whole wheat or spinach tortillas

1 lb (450g) sliced turkey breast

1 cup shredded lettuce

1 cup sliced tomatoes

1 cup sliced cucumbers

1/2 cup sliced bell peppers (any color)

1/4 cup thinly sliced red onions

1/2 cup shredded carrots

1/4 cup sliced black olives (optional)

1/2 cup hummus or Greek yogurt spread

Salt and pepper to taste

Optional: your choice of additional vegetables such as avocado slices, sprouts, or shredded cabbage

Instructions:

Arrange the tortillas in a neat line.

Each tortilla should have a coating of hummus or Greek yoghurt equally distributed over it.

Evenly divide the sliced turkey among the tortillas, centering it over each one.

Arrange the bell peppers, red onions, sliced tomatoes, cucumbers, shredded carrots, and any additional desired vegetables evenly on top of the turkey on each tortilla.

Evenly distribute the sliced black olives, if using, over the veggies.

Season the vegetables with pepper and salt.

To make wraps, gently fold each tortilla’s sides towards the center and then tightly roll them up.

You can use toothpicks to hold each wrap together or cover them with parchment paper if you’d like.

Serve immediately or keep chilled for later use. These wraps keep well in the refrigerator for up to 24 hours if prepared in advance.
