Black Bean and Sweet Potato Tacos Recipe

Ingredients:

2 medium-sized peeled sweet potatoes diced

1 drained can (15 oz.) of black beans

1 small red onion, diced

1 red bell pepper, diced

1 tablespoon of olive oil

1 teaspoon cumin powder

1 teaspoon smoked paprika powder

½ teaspoon chilli powder

Salt and pepper to taste

8 corn tortillas or flour tortillas (small)

Fresh chopped cilantro (garnish)

1 avocado sliced (optional)

Salsa or hot sauce (optional)

Lime wedges to serve with.

Instructions:

Bake the Sweet Potatoes

Preheat your oven to 400°F (200°C) for about 20-25 minutes

Sweet potato cubes should be put on a baking pan.

Drizzle olive oil over them and sprinkle cumin, smoked paprika, chili powder salt, and pepper on them; toss everything so it gets coated evenly.

Place the sweet potatoes in the oven until they get slightly crispy and tender.

Prepare the Bean Mixture:

Heat some olive oil in a big skillet over medium heat.

Add the red onions with the bell pepper dice, sautéing till they begin softening for about five minutes.

Add the black beans and cook until heated through about three – four minutes.

Combine and Warm Tortillas

Add sweet potatoes from the skillet containing bean mixture and gently stir them together

To make tortillas malleable, reheat them in a dry skillet in the microwave.

Assemble Tacos

Spoon the sweet potato and black bean mixture into the warmed tortillas.

Garnish with fresh cilantro and avocado slices (If you desire)

Serve alongside lime wedges and salsa or hot sauce.
