Chickpea and Spinach Curry

Chickpea and Spinach Curry Recipe

Ingredients:

1 can (15 oz) of rinsed and drained chickpeas

4 cups fresh spinach, roughly chopped

1 onion, finely chopped

3 garlic cloves, minced

1-inch piece of ginger, grated

1 can (14 oz) diced tomatoes

1 cup coconut milk

2 tbsp olive oil

1 tsp cumin seeds,

1 tsp mustard seeds

1 tsp turmeric powder

1 tsp ground cumin

1 tsp ground coriander

1 tsp garam masala

½ teaspoon red chili powder (to taste)

Salt to taste.

Fresh cilantro for garnish

Lemon wedges for serving

Instructions:

Preparation

In a big pan, warm up the olive oil over medium heat.

Add cumin seeds and mustard seeds. Allow to sizzle for a few seconds until you can smell the fragrance.

Sautéing

Add chopped onions and sauté till golden brown color.

Add Minced garlic together with grated ginger then cook for another 2-3 minutes till it becomes aromatic.

Spices:

Add turmeric powder, ground cumin, ground coriander, garam masala, and red chili powder then mix well so that spices get into the onion mixture properly.

Tomatoes and Chickpeas:

Add the diced tomatoes for about 5-7 minutes until they become soft while oil starts separating from them.

Mix well after adding the chickpeas.

Cook a further five minutes to let the flavors soak through the chickpeas.

Coconut Milk & Spinach:

Pour in the coconut milk and stir well. Bring mixture to a gentle simmer.

Add the chopped spinach and cook until the spinach wilts, about 3-4 minutes.

Finishing:

Season with salt to taste and let it simmer for a few more minutes until you get your desired consistency of curry.

Garnish with fresh cilantro

Serving:

Serve hot with fresh naan bread or steaming rice.

Fresh lemon juice can be squeezed on top to give it a tinge of freshness.
