Egg and Bean Burrito

Eating Egg and Bean Burritos is bliss as it combine the deep taste of airy fried eggs, healthy black beans, onions, tomatoes, bell peppers, and cheeses wrapped around in a tortilla. This dish is very flexible and can be eaten anytime during the day, for example, morning hours, at lunch, or even at dinner. Ingredients

4 big eggs

1 cup of cooked or canned black beans that have been drained and rinsed.

1/2 cup of diced tomatoes

1/2 cup of diced capsicum/bell peppers

1/4 cup of diced onion

1/4 cup shredded cheese (cheddar)

4 large flour tortillas

2 tbsp olive oil

Salt to taste

Optional: avocado slices, salsa, sour cream, hot sauce, fresh cilantro Instructions:

Make The Filling:

Heat olive oil in medium heat over a skillet.

Add onions; cook until tender.

Add tomatoes and black beans then let cook for additional 3-4 minutes; add salt and pepper if desired. Remove from heat; set aside.

Scramble Eggs:

Put four eggs into a bowl. Add salt to taste.

In another pan pour one spoonful of vegetable oil before heating it on medium heat.

Gently stir the eggs in the pan while cooking them until they get firm but still are moist about 3-4 minutes remove from heat.

Assemble Burritos:

On a clean work surface spread out four flatbreads/tortillas.

Divide egg scramble mixture evenly among each bread then sprinkle some cheese on top. One may opt to include avocado slices together with salsa where possible as well as scatter cilantro leaves all over it.

Wrap each burrito by folding both ends towards its centre before rolling it from bottom to top close the filling inside.

Serve:

It can be served immediately or wrapped in foil for on-the-go meals.
