Risotto with Wild Mushrooms Recipe

    • 1 tbsp unsalted butter
    • 2 cloves garlic, minced
    • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
    • Salt and pepper to taste
  • For the risotto:
    • 1 tbsp olive oil
    • 1 small onion or shallot, finely diced
    • 2 cloves garlic, minced
    • 1 ½ cups Arborio rice
    • ½ cup dry white wine (optional; substitute with more broth if desired)
    • 4-5 cups vegetable or chicken stock, kept warm on low heat
    • ½ cup freshly grated Parmesan cheese (plus extra for garnish)
    • 2 tbsp unsalted butter
    • 2 tbsp chopped fresh parsley (for garnish)
    • Salt and pepper to taste

Instructions

Prepare the mushrooms:

  • In a large skillet, melt the butter and olive oil over medium heat.
  • Add the sliced mushrooms and cook for 5 to 7 minutes, or until golden brown.
  • Add the salt, pepper, thyme, and garlic and stir. Cook until aromatic, about 2 more minutes. Take off the heat and place aside.

Begin the risotto:

o In a large, heavy-bottomed saucepan, heat the olive oil over medium heat.

o Add the chopped shallot or onion and cook for 3–4 minutes, or until softened.

Add the minced garlic and continue cooking for an additional minute.

o After adding the Arborio rice, toast it for two to three minutes, stirring continuously, or until the edges are just beginning to turn translucent.

Deglaze and cook the risotto:

  • The white wine, if using, should be added and stirred until it is mostly absorbed.
  • One ladleful of the warm stock should be added at a time. Stir often and let each addition absorb before adding the next. Continue cooking the rice for another 18 to 20 minutes or until it is creamy and soft but still somewhat al dente.

Combine and finish:

  • Add the butter, grated Parmesan, and sautéed mushrooms (save some for garnish). Mix until smooth and fully mixed.
  • Season to taste with salt and pepper.

Serve:

  • Spoon the risotto onto plates or serving dishes.
  • Sprinkle the Parmesan cheese, chopped parsley, and the saved mushrooms on top.
  • Warm up and savor!
