Miniature Mondrian; the abstract geometric paintings of Piet Mondrian, a Dutch artist famous for his use of strong black lines and primary colors (red, yellow, and blue), are reminiscent of the little, artistic appetizers or nibbles known as toasts. These toasts imaginatively imitate the bright color blocks and grid-like structure found in Mondrian’s well-known pieces, like Composition with Red, Blue, and Yellow.
For each Mini Mondrian Toast, a tiny piece of bread serves as the “canvas.” To create a neutral background, a smooth coating of cream cheese or another spread is placed. Brightly coloured vegetables (such as diced red and yellow bell peppers or purple cabbage) are positioned in the grid’s divisions to resemble Mondrian’s coloured blocks, while thin strips of black olives or other materials are used to mimic the black grid lines. Food colouring is occasionally applied to create a “blue” look for added realism.

Ingredients:
- White bread (or any neutral bread) – 4 slices
- Softened cream cheese – ½ cup
- Black olives – Thinly sliced or finely chopped
- Yellow bell pepper – 1 small, diced into small squares
- Red bell pepper – 1 small, diced into small squares
- Purple cabbage (optional) – Thinly sliced into strips
- Blue food coloring – A small drop (optional, to mimic a “Mondrian blue”)
- Parsley or chives – For garnish, finely slice parsley or chives (optional).
Instructions:
Prepare the Base:
o To create a solid base, lightly toast the bread slices, or leave them soft if you choose.
o To create the appearance of a canvas, cut the bread into little rectangular pieces.
Make the “Canvas” Spread:
If desired, add a drop of blue food coloring to the softened cream cheese to give it a subtle tinge. If you prefer a more traditional look, leave it white.
Create a smooth layer of cream cheese by evenly spreading it over the bread slices.
Create the Mondrian-Inspired Design:
To replicate Piet Mondrian’s grid-based artwork, use the black olives to draw thin, straight “grid lines” that separate the bread into parts.
Stuff the pieces with red and yellow chopped bell peppers of various colors.
Use purple cabbage or any other colorful ingredients to add even more color.
Finalize and Serve:
Place the Mini Mondrian Toasts on a dish after they are done.
To add a little green, you can optionally garnish with chopped parsley or chives.
Serve as a creative snack or appetizer!
In addition to being aesthetically pleasing, these toasts are also adaptable and nutritious. They are perfect for cocktail parties, art-themed events, or as an entertaining way to expose both adults and children to modern art. Mini Mondrian Toasts combine the disciplines of art and cuisine, creating a conversation starter as well as an edible work of art.
