Celebrate Easter with Traditional Italian Uncinetti Cookies

​ Known as “Uncinetti” or “Taralli Dolci di Pasqua,” Italian Easter cookies are customary sweets consumed in Italy during the Easter season. Festive additions to Easter celebrations, these delicate, slightly sweet cookies are usually covered with a simple icing and topped with colourful sprinkles. They are frequently flavoured with vanilla, almond or lemon zest.

Ingredients:

For the cookies:

Three cups of all-purpose flour

Two teaspoons of baking powder

One-sixth teaspoon of salt

One-eighth tablespoon of softened unsalted butter

Three big eggs at room temperature
Two tablespoons of almond extract

One teaspoon of vanilla extract

For the glaze:

One cup of sugar powder

Three tablespoons of milk or cream
One teaspoon of almond essence (you can also use vanilla extract or lemon juice)

Liquid food coloring

Decorating sprinkles

Instructions:

Prepare the Dough:

Mix the flour, baking powder, and salt in a medium-sized bowl.
Cream the granulated sugar and softened butter in a different large dish until they are light and fluffy.
Beat thoroughly after adding each egg, one at a time.

Add the almond and vanilla extracts and stir.
Mix the wet components with the dry ones gradually until a soft dough forms.


Form the cookies:

Put parchment paper on a baking pan and preheat the oven to 350°F (175°C). ​

To keep your hands from sticking, lightly flour them. ​

Roll out little pieces of dough (about a tablespoon each) into 5-inch-long ropes. ​

Press the ends of each rope together to secure it after shaping it into a loop or twist. ​

The formed cookies should be placed about 2 inches apart on the prepared baking sheet.

Bake:

Bake for 10 to 12 minutes, or until the bottoms are just beginning to turn brown, in a preheated oven.
Take the cookies out of the oven and let them cool fully on a wire rack.


Get the Glaze Ready:
Combine the almond extract, milk or cream, and powdered sugar in a bowl and whisk until smooth.
Separate the glaze into bowls and add food coloring if you’d like.

Decorate:

After each cookie has cooled, dip its top into the glaze and let any extra drip off.
Return the glazed cookies to the wire rack and sprinkle them with sprinkles right away.
Before serving or storing, let the glaze set.
