Roasted Eggplant Sabich Sandwich Recipe
Ingredients:

1 large eggplant, sliced into ½-inch rounds

2 tablespoons olive oil

1 teaspoon za’atar seasoning

Salt, to taste

4 pita breads

4 hard-boiled eggs, sliced

1 cup hummus

½ cup tahini sauce

1 cup Israeli salad (diced cucumbers and tomatoes with lemon juice and parsley)

½ cup pickles, sliced

Optional: Amba (pickled mango sauce) for added tang



Instructions:

Turn the oven on to 450°F, or 230°C.

Sprinkle the aubergine slices with salt and za’atar after brushing them with olive oil.

Roast for 35 to 45 minutes, or until browned and soft, after placing on a baking pan.

Get the pita bread warm.

In each pita, spread a layer of hummus.

Add the pickles, Israeli salad, hard-boiled egg slices, and roasted aubergine slices.

Drizzle with a dollop of amba and tahini sauce (If using amba).

Serve right away and savour!
