Glazed Cinnamon Focaccia Recipe
Ingredients:

- 450g bread flour
- 7g instant yeast
- 2 tbsp sugar
- 1 tsp fine sea salt
- 30ml olive oil, plus extra for greasing
- 360ml lukewarm water
For the Cinnamon Sugar:
- 3½ tsp ground cinnamon
- 50g caster sugar
- 50g unsalted butter, melted
For the Glaze:
- 3 tbsp icing sugar
- ¼ tsp ground cinnamon
- 2 tsp whole milk
- Pinch of salt
Instructions:
Prepare the Dough:
- In a large bowl, combine the bread flour, instant yeast, sugar, and salt.
- Make a hole in the center and add olive oil and lukewarm water.
- Mix until a shaggy dough forms.
Stretch and Fold:
- With slightly wet hands, perform a series of stretch and folds: pull one corner of the dough up and fold it over the center.
- Rotate the bowl 90 degrees and repeat the process three more times.
- Cover the bowl with a damp tea towel and let it rest for 30 minutes.
- Repeat the stretch and fold process twice more, with 30-minute rests in between.

- Perform one more set of stretch and folds to incorporate the cinnamon sugar.

Shape and Second Prove:
- Generously grease a 30cm x 22cm baking tin with olive oil.
- Transfer the dough to the tin and gently stretch it to fill the pan.
- Cover and let it rest in a warm place for another 30 minutes.
Bake:
- Preheat the oven to 230°C (210°C fan)/450°F/gas 8.
- Pour the melted butter over the surface of the dough and sprinkle with the remaining cinnamon sugar.
- Use your fingertips to dimple the dough, then bake for 20-25 minutes
- Remove from the oven and cool
Glaze:
- In a small bowl, mix icing sugar, ground cinnamon, milk, and a pinch of salt to make the glaze.
