Kimchi & Tofu Kimbap

Simple Recipe (makes ~5 rolls)
Ingredients


Rice filling:


2 cups cooked short-grain rice

1 tbsp sesame oil + pinch of salt

Filling:

200–250g firm tofu, cut into batons

1 cup well-fermented kimchi, chopped (include juices)

1 carrot, julienned

1 cucumber (seeds removed), sliced into sticks

Spinach (a handful) – coated with salt and sesame oil.

Optional: pickled burdock or danmuji (yellow radish)

Other:

5 sheets toasted nori

Sesame oil for brushing

Salt + cooking oil

Steps
Prepare the Rice: Mix together warm rice with sesame oil and salt to begin.

To cook the tofu, pat it dry and cook it in oil until it turns brown all over. Put aside.

Preparing vegetables:

Cool, squeeze, season, and blanch spinach.

Separately, sauté the cucumber and carrot until they are just beginning to soften. Season with salt.

Assemble rolls:

Spread about ¾ cup of rice equally over the nori (shiny side down) on the mat, leaving 1 cm at the top.

Put the tofu, kimchi, cucumber, carrot, spinach, and burdock or radish in order.

Brush with sesame oil, and roll tightly to seal the edge.

Cut into 2–3 cm circles and serve immediately (the refrigerator dries it up).

Advice & Modifications
For a warm, filling experience, briefly reheat your kimchi before rolling.

For added taste, top with cheese, egg strips, or spicy mayo.

To make bite-sized “mayak” (addictive) kimbap, use a miniature bamboo roller.
