Jackfruit Rendang Slider Recipe (Serves 4, makes ~12 sliders)
Ingredients

2 cups young green jackfruit, drained & shredded

1 tbsp coconut oil

1 small onion, finely chopped

3 garlic cloves, minced

1 tsp ginger, minced

2 tbsp rendang curry paste

1 can (400 ml) coconut milk

1 tbsp soy sauce, plus more to taste

1 tbsp lime juice

Salt, to taste

12 slider buns, lightly toasted

Fresh cilantro for garnish

(Optional: quick-pickled veg or slaw for added crunch)

Method
Add the aromatics and sauté them.
Coconut oil should be heated at medium heat. Add the ginger, garlic, and onion; sauté for 3 to 4 minutes, or until aromatic and transparent.

Make it more interesting
To release the flavours, stir in the rendang curry paste and sauté for around one minute.

Add the coconut milk and jackfruit.
Add the shredded jackfruit and drizzle with the soy sauce and coconut milk. Bring to a low simmer (around 20 minutes) until the jackfruit softens and the sauce thickens.

Final touches
Add the lime juice, salt, and additional soy sauce if necessary.



Assemble sliders
Stuff jackfruit into buns, then garnish with cilantro, and if desired, serve with pickles or slaw. Get warmed up and serve.

Advice & Modifications
Plan ahead: The flavours are enhanced if the jackfruit is prepared several hours or even a day in advance and then gently reheated before serving.

Levels of spice: Add more curry paste to make it more intense, or add a little coconut cream to make it milder.

Simple pickled cucumber or carrot slaw, or even chilled yoghurt to counterbalance the heat, might be used as a substitute.
