Recipe: Festive Plant-Based Christmas Spread

Ingredients:

  • 1 cup raw cashews (soaked in hot water for 20 minutes)
  • 2 tbsp olive oil
  • 2 cloves garlic, roasted or lightly sautéed
  • 2 tbsp nutritional yeast
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • 1 tsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme leaves
  • ¼ cup dried cranberries, finely chopped
  • Salt and pepper to taste
  • 2–4 tbsp water (for thinning)

Instructions:

Drain the soaked cashews and add them to a food processor.
Add the nutritional yeast, maple syrup, lemon juice, olive oil, roasted garlic, and a dash of salt.
Add water in little bits until the mixture is smooth and reaches the desired creaminess.
Fold in the fresh herbs and chopped dried cranberries after removing the blade.
Adjust the seasoning with extra salt, lemon juice or pepper.
To help the tastes emerge, chill for one hour before serving.


Serving Advice:
Serve with toasted baguette pieces, seeded crackers, or veggie sticks. Add a drizzle of olive oil and a sprinkle of extra cranberries or herbs on top for a festive touch.
