Seafood Christmas Dinner – A Festive Coastal Twist

Recipe: Holiday Seafood Medley with Garlic Herb Butter

Serving: 4

Time: 35 minutes

Ingredients

  • 400g large prawns, cleaned
  • 300g scallops
  • 400g white fish fillets (cod, hake, sea bass) cut into chunks
  • 300g mussels, cleaned
  • 4 tbsp butter
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 tsp smoked paprika
  • Fresh parsley, chopped
  • Salt & pepper
  • Optional sides: roasted vegetables, crusty bread, or lemon rice

Instructions

Get the pan ready.
Heat two tablespoons of butter and olive oil on medium.

Add the garlic and cook until the fragrance engulfs the room.


Prepare the scallops and fish.
Add the scallops and slices of white fish.

Include the smoked paprika, pepper, and salt for seasoning. Cook on each side for a couple of minutes.
Add the prawns.
Add the prawns and heat until they turn pink.
The mussels should be steamed.Add the zest, lemon juice, and mussels. All shells should open after 3–4 minutes of covering.
(Throw away any mussels that are still unopened.)
Use herb butter to finish.
For a fragrant finish, stir in the parsley and butter.
Serve
Place on a big dish and cover with the pan juices. Serve with wedges of lemon.
