Ingredients (Serves 2)
- 2 thick slices artisan sourdough
- 1 large ripe avocado
- 1 tbsp fresh lemon juice
- Sea salt flakes
- Freshly cracked black pepper
- 1 soft-boiled egg (optional, for drama)
- 1 tsp chili oil (the kind with visible flakes)
- A small handful microgreens
- Edible flowers (pansies, nasturtiums, or violas)
- ½ tsp toasted sesame seeds or dukkah
- Extra virgin olive oil (for gloss)
Method
Make an intentional toast.
The sourdough should be toasted until it is brown and sufficiently constructed to support toppings without sagging. Both aesthetically and emotionally, a solid foundation is necessary.
Cultivate, but smash.
Mash the avocado, lemon juice, and a pinch of salt in a bowl. Don’t make it too smooth. Gentle bits indicate authenticity; too smooth feels artificial.
Use caution when spreading.
Give the avocado a thick layer, leaving a 1 cm margin all the way around the crust. The composition is framed by negative space.
Create curiosity in vertical space.
Place the soft-boiled egg slightly off-center and cut it in half if using. Symmetry bores the algorithm, whereas height attracts the sight.
Drizzle to get people interested.
Slowly and carefully spoon the chili oil in arcs. Let it shine. Gloss is a sign of desirableness.
Put the evidence there.
Lightly scatter the microgreens. Don’t add more than two or three edible blossoms. Trying too hard is interpreted as excess.
