Method
1. Prepare the Texture
Pulse the walnuts in a food processor until crumbly, resembling coarse mince.
Chop the mushrooms finely so they cook evenly and integrate well.
2. Build the Base
Heat olive oil in a large pan over medium heat.
Add onion and cook for 4–5 minutes until soft. Stir in garlic and cook for another minute.
3. Cook the Filling
Add mushrooms and cook for 6–8 minutes until they release their moisture and begin to brown.
Stir in the walnuts and cook for 3–4 minutes, allowing them to toast slightly.
4. Season and Finish
Add cumin, smoked paprika, chili powder, and soy sauce.
Stir well and cook for another 2–3 minutes until everything is coated and fragrant.
Taste and adjust seasoning. The mixture should be savory, slightly smoky, and well-balanced.
5. Assemble
Warm the tortillas in a dry pan or oven.
Spoon the filling into each tortilla and top with cilantro, tomatoes, avocado, and a squeeze of lime.
