Protein-Rich Plant-Based Recovery Bowl

Ingredients
For the Bowl
- 1 cup cooked quinoa
- 1 can (400g) chickpeas, drained and rinsed
- 200g firm tofu, pressed and cubed
- 2 cups baby spinach
- 1 cup broccoli florets
- 1 medium sweet potato, diced
- 1 red bell pepper, sliced
- 1 tablespoon olive oil
- Salt and freshly ground black pepper
Seasoning
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon turmeric
- ½ teaspoon dried oregano
Creamy Lemon Tahini Dressing
- 2 tablespoons tahini
- Juice of 1 lemon
- 1 tablespoon olive oil
- 1 teaspoon maple syrup
- 1 small garlic clove, minced
- 2–3 tablespoons water
- Pinch of salt
Optional Toppings
- Pumpkin seeds
- Hemp hearts
- Sliced avocado
- Fresh parsley
- Chilli flakes
- Toasted almonds
Method
Roast the Vegetables
Set the oven to 200°C (fan 180°C).
Arrange the broccoli and sweet potato on a baking tray. Add smoked paprika, cumin, turmeric, garlic powder, oregano, salt, and pepper after drizzling with olive oil.
Roast till soft and slightly caramelised, rotating halfway through, for 20 minutes.
Prepare the tofu
Heat a nonstick pan over medium heat while the vegetables roast.
The tofu cubes should be brown on both sides after 8 to 10 minutes of cooking, with periodic turning.
Add a small amount of smoked paprika, salt, and pepper for seasoning.
Get the dressing ready.
Tahini, lemon juice, olive oil, maple syrup, garlic, salt, and water are all combined and whisked until smooth and creamy.
If you want a thinner consistency, add additional water.
Put the Bowl Together
Split the cooked quinoa between two bowls for serving.
Top with the tofu, chickpeas, spinach, peppers, and roasted veggies.
Pour the lemon tahini dressing over it generously.
Add avocado, fresh parsley, hemp hearts, and pumpkin seeds to finish.
Serve right away.
