- A drizzle of extra virgin olive oil

Method
1. Sauté the veggies
Heat the olive oil over medium heat in a saucepan.
Cook the celery, onion, and carrots for five to seven minutes, or until they are tender. Add the garlic and courgette and cook for a further two minutes.
