Tasty Tuesday: Grilled Lemon Herb Chicken combined with Roasted Vegetables

Ingredients:

For the chicken:

  • 4 boneless, skinless chicken breasts
  • 2 lemons
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves, chopped
  • 1 tablespoon fresh rosemary leaves, chopped
  • Salt and black pepper to taste

For the roasted vegetables:

  • 1 bunch asparagus, trimmed
  • 4 medium-sized carrots, wash, peel and cut into sticks
  • 1 pint cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions:

  1. Preparing the marinade:

In a small bowl, combine the juice and zest of one lemon, olive oil, minced garlic, chopped thyme, chopped rosemary, salt, and black pepper.

Mix all the ingredients together until perfectly blended.

2. Marinating the chicken:

In a shallow dish or a plastic bag, place the chicken breasts.

Pour the marinade over the chicken, making sure it’s coated evenly.

Cover the dish or seal the bag and refrigerate for at least 30 minutes, or preferably overnight to allow the flavors to develop.

3. Preparing the roasted vegetables:

Preheat the oven to 425°F (220°C).

On a large baking sheet, arrange the asparagus, carrots, and cherry tomatoes in a single layer.

Drizzle the vegetables with olive oil, sprinkle with salt and black pepper, and toss to coat evenly.

Carefully place the baking sheet in the pre-heated oven and roast until the vegetables are tender or for about 20-25 minutes or until slightly brown.

Stir occasionally during cooking.

4. Grilling the chicken:

A grill or pan should be pre-heated over medium to high heat.

Remove the marinated chicken breasts from the refrigerator and let them sit at room temperature for 10 minutes.

Grill the chicken for approximately 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.

Squeeze the juice of the remaining lemon over the grilled chicken breasts.

5. Serving:

Arrange the grilled lemon herb chicken on a serving platter.

Place the roasted vegetables alongside the chicken.

If desired, adorn the dish with fresh herbs.

Note: You can adjust the cooking time based on the thickness of the chicken breasts and personal preference. Make sure to use a meat thermometer to ensure the chicken is fully cooked.
