Ingredients:

1 lb (450g) squid ink pasta (store-bought or homemade)

1 lb (450g) fresh squid or shrimp, cleaned and chopped (optional)

1/2 cup seafood or chicken stock

Salt and pepper, to taste

2 tbsp chopped fresh parsley

Grated Parmesan cheese (optional)

Lemon wedges (for serving)

Instructions:

Cook the Pasta:

Boil a large pot of salted water. Add the squid ink pasta and cook according to the package directions (typically 8-10 minutes) until al dente. Drain, saving about 1 cup of the pasta water, and set aside.

Prepare the Sauce:

Heat the olive oil over medium heat (in a large skillet).

Add the minced garlic and chopped onion, sautéing for 2-3 minutes until they become fragrant and translucent.

If you like a spicy kick, sprinkle in the red pepper flakes.

Add Wine and Stock:

Pour in the white wine (if using) and let it simmer for a few minutes until it reduces by about half.

Add the seafood or chicken stock, and stir in 1 tablespoon of squid ink to intensify the dark color. Let this mixture simmer for another 3-5 minutes.

Add the Seafood:
