Roasted Herb-Crusted Lamb Rack

A sophisticated take on classic Thanksgiving fare, this Roasted Herb-Crusted Lamb Rack features tender, herb-infused lamb with a gorgeously crispy crust. Lamb during Thanksgiving honours several early American customs in which turkey was often served with other meats, such as lamb or venison. Ingredients:

  • 1 rack of 8 ribs lamb
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 3 garlic cloves, minced
  • 2 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup breadcrumbs for crispiness
  • Zest of 1 lemon

Instructions:

Get the lamb ready:
Set the oven temperature to 200°C or 400°F.
Using paper towels, pat the lamb dry and take off any extra fat.
Season on all sides with salt & pepper.


Get the Herb Crust ready:
Combine the lemon zest, parsley, thyme, garlic, and rosemary in a small bowl.
To achieve a moist, crumbly texture, stir in the breadcrumbs, a touch of salt, and olive oil.

Apply the Mustard and Herb Coating

Evenly coat the rack of lamb by rubbing it with Dijon mustard.
Making sure the breadcrumbs and herbs stick together, press the herb mixture onto the lamb that has been coated in mustard.

Roast the Lamb
To cook the lamb, put the rack, bone side down, in a roasting pan.
For medium-rare (inside temperature should read approximately 125°F or 52°C), roast for 20 to 25 minutes; if you want a more well-done outcome, roast for longer.

Rest and Serve:

Before slicing, take the lamb out of the oven and give it ten minutes to rest.
If preferred, top the dish with additional fresh herbs, fruits or veggies after slicing it into individual chops between the ribs.
