Method
Start out slowly.
Put a big pot on low to medium heat. Warm it gradually after adding the olive oil. Add a small sprinkle of salt to the onion and cook, turning regularly, for 5 to 7 minutes, or until the onion is soft and translucent but not browned or hurried.
Construct the base
Add the cumin (if using), garlic, and thyme. Stir until aromatic, about 30 seconds. Before continuing, let the scents rise.
Add the liquid and lentils.
