No-Knead Overnight Oat & Seed Bread

This method of baking bread has a subtle radical quality. Don’t hurry. No dough for wrestling. All you need to do is mix gently, take a lengthy break, and have faith that time will take care of the rest. This no-knead oat and seed bread is a perfect fit for a slower pace of life, where patience is an ingredient rather than a delay.
Allowing the dough to rest overnight enables the yeast to progressively create structure and flavour as you sleep. The entire loaf becomes substantial without becoming heavy as the grains soften and the seeds hydrate. It’s a soothing loaf that’s perfect for soup on chilly nights, morning toast, or just enjoyed warm with butter and purpose.

No-Knead Overnight Oat & Seed Bread

Ingredients

  • 300 g wholemeal flour
  • 100 g rolled oats
  • 60 g mixed seeds (sunflower, pumpkin, sesame, flax work well)
  • 1½ tsp salt
  • 1 tsp instant yeast
  • 400 ml warm water
  • Optional: 1 tbsp honey or maple syrup (for a subtle sweetness)

Method

Mix for five minutes.
Mix the flour, oats, seeds, salt, and yeast in a big bowl. Add the warm water (and honey, if using) and stir until thoroughly mixed. You want the dough to be sticky and moist.
Rest for eight to twelve hours.
Place a tea towel or cover over the bowl and let it sit at room temperature for the entire night. Without any assistance, the dough will rise, soften, and develop taste during this period.
Shape (two minutes, optional)
Gently fold the dough over itself once or twice in the morning after lightly flouring your hands. Just a loose form, no kneading.

Bake: Preheat the oven to 220°C (fan 200°C).
• Line a loaf tin with baking paper or lightly oil it.
•If desired, top the dough with extra oats or seeds after tipping it into the tray.
• Bake for 35 to 40 minutes, or until the loaf is brown and has a hollow sound when tapped.
Cool (the hardest part)

Before slicing, let the bread cool for at least twenty minutes. This enhances texture and aids in the crumb’s setting.

How to Have Fun with it
Avocado, olive oil, and lemon; toasted with butter and a dash of salt; or served with soups, stews, or leisurely weekend breakfasts
