Certain travel meals are designed to provide comfort by being heavy. Rolls of rice paper have the opposite effect. Constructed with crisp veggies, herbs, noodles, and protein firmly wrapped in transparent rice paper, they are lightweight, cool, fresh, and balanced.
These wraps, which are frequently linked with Vietnamese-inspired fresh spring rolls, are perfect for travelling when you want something filling without feeling heavy. They can be prepared in advance, don’t need to be reheated, and remain refreshing even after hours of transportation.
They are portable, hygienic, and customisable to suit nearly any taste.

Why Rice Paper Rolls Work for Travel
When packaged carefully, fresh spring rolls retain their structure remarkably well. In contrast to sandwiches that soften or leafy salads that wilt, rice paper wraps preserve the contents while being lightweight and portable.
They are particularly helpful for:
• Travel via train
• Road trips in the summer
• Aeroplanes
• Picnics
• Extended workdays
They also portion naturally and produce less mess when travelling because they are individually packaged.

- 100g vermicelli rice noodles
- 1 cup cucumber, thinly sliced
- 1 cup carrots, julienned
- 1 cup lettuce or shredded cabbage
- Fresh mint leaves
- Fresh coriander or basil
- 1 avocado, sliced
Protein Options
Choose one:
- Cooked shrimp
- Grilled chicken strips
- Tofu slices
- For a fully plant-based version, use extra vegetables
Optional Dipping Sauce
Peanut Sauce
- 2 tablespoons peanut butter
- 1 tablespoon soy sauce
- 1 teaspoon honey or maple syrup
- Juice of ½ lime
- Warm water to thin
Whisk until smooth.
Method
Get the noodles ready.
The directions on the package need to be followed to cook the vermicelli noodles.
After draining, rinse with cold water and reserve.
Arrange the Fillings
For easy assembly, divide the protein, noodles, vegetables, and herbs into different bowls or pieces.
Make the rice paper softer
Pour warm water into a shallow basin or plate.
One rice paper wrapper should be malleable but not too soft after being submerged in water for ten to fifteen seconds.
Place it flat on a spotless surface.
Roll and Fill
Around the lower center of the wrapper, add a little amount of noodles, avocado, vegetables, herbs, and protein.
Tuck in the sides, roll tightly, and fold the bottom up over the contents.
Continue with the remaining wrappers.
Prepare for Travel
To keep rolls from sticking, place them in a container covered with parchment paper.
If at all possible, avoid stacking directly on top of one another.
Keep cold till you leave.
